I apply all of the above to boneless leg or loin (cook a bit higher at 180°) and it works every time. Best crackle you’ve ever eaten I promise!! The gravy is next level. I bought a OXO fat separator jug that is a total game changer. You will spoil yourself for any other roast.

This worked out well and crackling is the best ! Does the liquid have to be in the pan with the pork? I did this in my Weber and the liquid dried out really quickly and the pan “burnt” so I couldn’t make gravy. I wondered about putting the meat directly on a tray and a container of liquid next to it to provide moisture in the bbq. I realise I wouldn’t get gravy from pan drippings this way either.

Crispy crackling every time! And the best gravy I’ve ever made. I always have to add more liquid to the pan during the roosting process, though. Used a pork leg last time and it worked just as well. Super happy family!
